Four generations hold the town square
The Gkertsou family has cooked at the corner of Trikalon since 1925, filling a high-ceilinged room with old photographs and tables that face Kalambaka's main square. Lamb shank, veal with onions, pork shank and beetroot salad come from casserole pots rather than a tourist-facing grill line.
Ask to see the cooked dishes before ordering; meat texture varies by pot, and recent diners found one veal portion tough. The kitchen closes around 9:30pm and rests Wednesday, so book an earlier dinner when tour groups remain in town.
