Begin in Polygyros where spring water and plane-tree shade explain the town's mountain character better than a distant panorama
Exi Vryses is a modest place with a useful role: it introduces Polygyros as a settlement shaped by hillside springs rather than the beaches usually associated with Halkidiki. Stonework, running water and mature shade make this a natural pause before walking into the centre. The surrounding streets reveal tiled houses, small shops and the daily scale of a regional capital without requiring a formal sightseeing route.
Visit in the morning, when the light is softer and the town is active, then continue on foot towards the museums and main square. Treat the fountain as local infrastructure and gathering space, not a stage set: keep access clear and do not use soap or leave food waste. Paving can be wet around the spouts. If you intend to fill a bottle, ask locally whether the water is currently designated for drinking rather than assuming every flowing spring is potable.
