Krokos Kozanis has PDO protection, but the most useful visit explains why. Crocuses flower for a short autumn period, the blossoms are gathered by hand and the red stigmas require careful separation and drying. The cooperative, founded in 1971, organises production and quality control across the growing area. Outside harvest, the village still gives geographical context, but visitors should not expect flowering fields year-round.
Arrange any cooperative or producer visit in advance rather than arriving at processing facilities unannounced. During the bloom, remain on roads and field edges unless invited; trampling a crop for photographs directly damages a grower's work. Buy sealed, labelled saffron from an authorised outlet and use it sparingly at home. Krokos lies only a short drive south of Kozani and pairs naturally with Aiani, creating a full day of archaeology and living agriculture.
