Merceri places an open kitchen behind a softly lit Thiseio dining room near the Herakleidon Museum. Melina Chomata and Maria Ntioudi draw on hotel kitchens in Santorini, but the room stays closer to a compact bistro than a formal resort restaurant.

Contemporary Greek dishes come à la carte or as a tasting menu, with optional wine pairings and regular seasonal changes. It opens Wednesday through Sunday from 18:00; reserve the tasting format in advance, tell both chefs about allergies, and ask how many courses the current menu carries.
